Cultivation of the vine on the Masseria Capoforte estate takes place in sandy-clay soils rich in tuff, a generous, sapient rock, friend of the burnt earth, which jealously guards the water, then slowly releases it to the soil. Viticulture here privileges quality at every growing stage. The choice fell first on a variety-specific vineyard, the first on the Ionian coast, its vines trained to the single Guyot system, at a high density of vines per hectare. The choice too is harvesting by hand, with loving hands painstakingly selecting each cluster so that it remains perfect, sound, and healthy in its fullness and in its fragrances. The selection must be solely the production of the highest quality wines.
